Start with which of them actually have fibre to your building, because service quality depends more on the local network than the brand. Ask neighbours how the service holds up in the evening and how fast faults get fixed. A yearly plan is usually much cheaper per month than paying monthly. Get a VAT bill and a written quote before you pay.

How do I switch providers?
Wait until your paid period ends, return the provider's router or ONU to get your deposit back and get the new provider to install before you cancel.
The internet keeps dropping and support doesn't fix it.
